Salmon burger

with

pea shoots and  tartar sauce

The Pea Shoots gives not only a great taste of sweet peas, which goes well with the salmon, but also crispiness and loads of texture.

Salmon burger with pea shoots and tartar sauce

The salmon can be replaced with any white fish, which could be breaded in panko, a full meal in it self but begs to be served with thick Belgian pomme frites.

Ingredients for the burger:

- Salmon or white fish

- Pea Shoots, washed

- Tartar sauce

- Pickeled cucumber

- Brioche burger buns

Ingredients for the tartar sauce:

- Mayo, Creme Fraiche (18%), Mustard

- Finely chopped:

        - Parsley, dild, capers, cornichon

- Finely shredded lemon peel

- Fresh lemon juice

- Salt and peber
